The Biscuit Battle

I absolutely love a good biscuit! It has been making me crazy lately that a food that is so simple to put together is so delicate and intricate when it comes to achieving the desired end result.  I find it a bit disturbing that most fast food restaurants actually have someone come in and whip a batch of from scratch biscuits and they're so light and flaky! Meanwhile, I'm going through multiple recipes and test kitchens and have yet to get the right result.

I'm not saying that the biscuits that I've made haven't turned out or are inedible, but, they are not the texture of your southern grandmother's or even my aunt who actually used to make the homemade biscuits for the fast food industry.  No matter how I try my favorite texture and taste continues to elude me!

My made from scratch biscuits. While they look and taste fine. They're not as light as I want. Too dense!

These are made using a bicuit mix and adding extra baking powder. Still didn't achieve the goal.
If anyone out there has the secret to the type of biscuits that I'm looking for please share it! Otherwise I'll have to admit defeat in the biscuit battle and return to the grocers freezer!
