I absolutely adore Spaghetti Ala Carbonara. The problem is with the traditional Italian recipe it calls for Panchetta which is so tasty and good but can also be quite expensive. Realizing that it is just an Italian cured pork much like our bacon or ham I opted for a less expensive method that comes in just as tasty and doesn't give your wallet a belly ache!
Country Carbonara
2 tablespoons extra virgin olive oil
1 1/2 cups cubed cured country ham
15 cranks of ground pepper or 1 1/2 teaspoons black pepper
2 garlic cloves minced
10 oz. thin spaghetti noodles
4 eggs
1 teaspoon Nutmeg
6 oz. Parmesan cheese shredded
1/2 cup pasta water reserved for sauce
Directions:
Sauté ham until crisp but not crunchy in oil in a large pan
Add pepper while meat cooks
In last minute add butter and minced garlic
Remove from heat
Cook pasta according to directions using the least amount of time directed
While pasta is cooking mix together eggs,nutmeg,& cheese
Return meat to heat in same pan
Add the cooked pasta to the pan with meat.
Stir to coat.
