A mountain of leftover mashed potatoes should NEVER be discarded! I had a ton of potatoes left after a roast beef dinner. Rather than just tossing away the perfectly good spuds, I opted to throw together a Shepherd's pie. There are so many takes and recipes for this meal. Any one is very easy and so inexpensive to make.
SHEPHERD'S PIE
1 1/2 LB ground beef
1 Cup beef stock or broth
1 Medium onion finely diced
2 Tablespoons Worcestershire sauce
1 1/2 Tablespoons Beef Stew seasoning
1 teaspoon granulated garlic
1 Bay leaf
1 Cup frozen mixed peas and carrots
3/4 Cup frozen corn
3-4 Cups prepared or left over mashed potatoes
Paprika to sprinkle on top
Preheat oven to 400*F
1. In a large skillet saute the onion with a salt and pepper until translucent.
2. Add the ground beef and cook until browned. Make sure to continue cooking until the beef has actually browned and begun to just slightly crisp. It should be browned not just the grey color of cooked beef. This technique adds so much more flavor. Drain excess fat if necessary.
3. Add the beef stock and Worcestershire then the next three ingredients and simmer over medium heat for 10 minutes until the liquid has reduced.
4. During the last 5 minutes of cook time add the frozen veggies.
5. Remove the bay leaf and pour the meat and veggie mixture into a medium casserole dish.
6. Spoon the potatoes over the mixture until completely covered and then fluff with a fork to form small peaks to allow browning.
7. Place dish on a baking sheet on middle rack of the preheated oven and bake for 25-30 minutes until bubbly and the potatoes have started to brown.
8. Remove and allow to cool slightly, sprinkle with Paprika and serve with toasted bread or rolls.

BONUS RECIPE
Because of the magnificent film "Julie & Julia", I had to haul my butt up 15 minutes into the film and scramble to make up that beautiful pan bruschetta that is featured in the film. I didn't have all of the ingredients on hand at 12:01AM but I made due.
MIDNIGHT BRUSCHETTA
French,Italian, or any hearty bread that is on hand other than sandwich bread.
Fresh tomatoes
1 1/2 Tablespoons olive oil
1 teaspoon of dried basil
1 garlic glove
Pinch of Parmesan cheese for topping
Dried or fresh parsley to garnish the top
Heat the oil in a pan over medium heat, brown the bread on both sides until golden brown and crisp on the outside while still soft on the inside.
Remove the toasted bread to paper towels.
Turn off the heat and place diced tomatoes in the still hot oil and heat through with salt, pepper, and the basil.
Rub the bread with the garlic clove that has been cut in half and top with the seasoned tomatoes.
Sprinkle with Parmesan cheese and parsley and eat!!!!
The process for making this is so fast. I made it and was back in bed watching "Julie & Julia" within minutes! Bon Apetit!
