Tried creating a sauce to go with more than just my Cuban sandwiches. I chose not to photograph it, because, sauces don't really photograph well.
Here is the recipe
1 pickled jalapeno pepper chopped
1 Tablespoon honey
1/4 cup mayonnaise
1/3 cup Dijon mustard
pinch of salt and cracked black pepper
Combine all ingredients in a small dish until combined. Cover and refrigerate for at least an hour and up to over night. The longer the mixture sits the more the flavors have a chance to become acquainted and more intense.
This sauce goes excellent on Cuban sandwiches and I also use it for Chicken tenders both grilled and fried. Could also work as a great alternative to tarter sauce to give seafood a little kick. In this case I would reduce the mustard level by just a pinch, and replace it with a Louisiana hot sauce.
