These are so simple to make. So rich and filling; ready in no time!
GARLIC CHICKEN & CHEESE BOMBS
Ingredients:
4 oz. room temperature cream cheese (to lighten this dish up you can substitute low fat)
2 garlic cloves, minced
1/2 cup mixed shredded cheese(jack and cheddar or Mexican blend)
2 chicken breasts roasted or use a store bought rotisserie chicken shredded without skin
1 spring/green onion both green and white parts chopped(I use kitchen shears and just cut them)
salt and pepper to taste
16 small room temperature cubes of jack or mozzarella cheese
1 package of canned large or jumbo refrigerated crescent rolls(such as Pilsbury or Pepperidge Farm)
Directions:
1. Heat oven to 350* F
2. In a medium/large bowl combine all ingredients except the cheese cubes until well blended.
3. Spread the crescent rolls out into their individual triangles and place 2 cubes of the reserved cheese at the wide end and top with a generous amount of the filling mixture.
4. Roll each triangle up and fold the leftover side pieces around to the top.
5. Place on a parchment lined or non-stick baking sheet and bake for 15-20 minutes until golden. If you feel they aren't browning properly you can pop on the broiler in the last minute or two. Just MAKE SURE to keep a close eye if you choose to do this. They can go from perfectly browned to burnt in a matter of seconds.
Makes 8 servings
Serve hot with a side salad or roasted veggies. Insanely filling!
