Quick Fixes

Realizing that we don't always have time to prepare an entire from scratch gourmet meal.  I have been trying to give some simple quick fix dishes a try.  While remaining true to the concept of actually creating something as well.

My mother, as I have mentioned before is a casserole loving queen.  If you can pop it in a baking dish and have all your ingredients in one recipe she is all for it.  Last night I was at a loss for dinner ideas. I grabbed a few ridiculously easy items to make and started making up a casserole myself.  Here's what I came up with:

Broccoli Chicken & Potato Casserole

INGREDIENTS
- 1 pound chicken breast tenders
- 2 Tablespoons oil(Canola/Vegetable)
- 1 packet of dry Italian dressing mix
- 1 box Cheesy Julianne Potatoes( Such as Betty Crocker)
- 1 bag steamable broccoli with cheese sauce
- 1/4 cup of grated Parmesan cheese
-1/2 cup shredded Cheddar cheese
- Salt and pepper to taste

DIRECTIONS
1. Preheat oven to 350*F
2. Cut chicken tenders into about 1 inch chunks. In a medium/large bowl toss the tender chunks with the Italian seasoning packet.
3. Prepare the Cheesy Julianne potatoes according to package directions for the stove top.
4. While the potatoes are cooking, heat oil in a pan over medium high heat and saute the chicken chunks until cooked through. Remove to a paper towel lined plate.
5. Microwave the steamable broccoli with cheese sauce according to package instructions. I like my broccoli a little softer in these types of dishes so I go for the longer cook time suggested.
6. Spray a baking/casserole dish with cooking spray. By this time all of your building components are finished. Add the potatoes,chicken, then the broccoli with cheese sauce to the dish. Add salt and pepper to taste. Top with the Parmesan and Cheddar.
7. Place in the preheated oven for 15 minutes until the cheeses are melted and bubbly.

*Note* You can add breadcrumbs or crushed crackers to the top if you like an additional crunch.

The other simple go to dish is just an easy alteration to the classic grilled cheese.  It makes a perfect lunch.  Team it up with soup and a salad and you have a complete meal for anytime of the day.

Triple Cheese Grilled Cheese with Bacon

Set up your preparations for the basic grilled cheese sandwich.  Crisp up the bacon. Once your bread has been buttered add some grated Parmesan cheese to the buttered side, put the bread buttered side down in a skillet over medium low heat, add Swiss cheese then bacon, then add a slice of American cheese. Top with the other slice of bread and cook on both sides until golden brown and crisp. The Parmesan on the outside creates a wonderful crust and flavor. 


So good!  You can also switch up the cheeses to your desired taste.
