The Recipes Aren't Going to Post Themselves

After deciding to add additional social media pages (Facebook,Twitter,Instagram,Pinterest), I went back through and checked the blog for anything that may need updating.  What I realized , was that, I had neglected to post some of the recipes.  My fault, my bad.  Upon recognizing that, the recipes aren't going to write or post themselves.

I will now begin the process of actually giving the recipes.

PORK FRIED RICE

- 2 or 3 bone in pork chops seasoned with ground black pepper and just a sprinkle of kosher salt
- 2 Tablespoons Canola oil
- 1 medium yellow onion finely chopped
- 2 cloves garlic chopped
- Rice cooked according to package instructions to make 4 servings. Amounts and cook times on this will differ slightly depending on type and brand.
- 1/4-1/2 cup Soy sauce.  More or less to taste.
- 1/2 cup frozen peas and carrots
- 1 Tablespoon unsalted butter
- 2 large eggs beaten


DIRECTIONS:

1. Heat Canola oil over medium high heat in a large skillet.
2. Add seasoned chops to the oil and fry until cooked through & golden brown on both sides.
3. While chops are cooking prepare your rice according to package instructions.
4. Remove chops and allow to cool.
5. Once chops are cooled, remove from bone and chop into small bite sized pieces and reserve.
6. In the same pan that the pork chops were cooked in add the onion and cook until soft and slightly golden.  Add chopped garlic and cook for just 45 seconds to one minute.
7. Add the cooked rice to the pan and the reserved chopped pork.
8. Stir everything together and allow to just blend together with the pan drippings and flavors
9. Stir in Soy sauce, starting with 1/4 cup and gradually adding more to taste. Taste as you go with this to avoid making too salty.
10. Add the frozen peas and carrots and combine.
11. Push the rice mixture to one side of the skillet. Now add the unsalted butter and beaten egg to the empty side of the pan and scramble up. Once egg has begun to scramble slowly begin adding the rice mixture from the other side of pan.
12. Reduce heat to low and cover for 5 minutes. Stir and Serve.

Serve with your favorite egg rolls  and you have Chinese delivery at home for half the price.  This easily feeds 4-6 people.
