Something to Eat and Drink To

Recent ideas and chats have led to a burst of inspiration.  With the blog being called "I'll Eat and Drink to That", I figured it was time to submit some more cocktail ideas and recipes. I've also been steadily trying to find ways to freshen up the most standard of ingredients. Sometimes I fall flat and others I hit pay dirt. Tonight was a success on both counts, thus bringing two new recipes to the repertoire.

The first is an ice cold, perfect for summer beverage with a kick!

THE INDUSTRY STANDARD

- 3/4oz. Southern Comfort
- 1oz. Strawberry flavored vodka
- Pint glass completely filled with ice
- Grape/Raspberry juice combo such as V8 Fusion

In a mixing tin or shaker glass, fill with ice and add in order. The Southern Comfort, Vodka and enough juice to just cover the ice. Shake vigorously no less than 30 seconds and strain over the ice filled pint glass. 
Grab a straw and enjoy!


ROASTED TURKEY BREAST FRESCO

- Turkey breast tenderloin. These usually come in packages containing two at your grocery store.
- 1 1/2 tablespoon of olive oil
- salt and pepper 
- Tomato sliced, seasoned with salt and pepper
- 1 stick of unsalted butter
- juice of half a lemon
- 1 teaspoon granulated garlic
- 1 teaspoon chopped flat leaf parsley

Preheat oven to 400*F.
Drizzle olive oil over the tenderloin and generously add salt and pepper and rub in.
Roast in preheated oven for 45-50 minutes until cooked through and juices run clear or instant read thermometer reads at least 165 or above.
During the last 15 minutes put the sliced tomatoes in the oven and allow to roast along side the turkey.
During this time, in a small sauce pan slowly melt the butter with the lemon juice, garlic, and parsley. Keep warm over low heat.
Remove meat from oven and cover with foil and allow to rest for at least 5-10 minutes to allow juices to redistribute.
Slice the tenderloin and place 3 or 4 slices in a fan formation slightly overlapping.
Top with a roasted tomato slice and drizzle with the lemon butter sauce.

Serve this with fresh veggies or a green salad and you have a refreshing summer meal. So much better than hum drum everyday roast turkey and gravy. You may also substitute the turkey for boneless skinless chicken breast. Just be sure and adjust cooking temps and times accordingly.
