When I started doing this, I wondered myself if I would stick with it. We all have the moments and things that we want to give a whirl and then grow tired of it or get busy and move on to something else. I am happy to actually have stuck with it for a hundred posts and more than a year. I will admit, I get a case of the lazies now and then. There are days and nights that I simply don't want to do the research or cooking an entire meal for test kitchen. This is something that I really enjoy and that has made it much easier to keep up the recipes, writing, and cooking.
My wonderful friends Diana & Elaine introduced me to 'Gardein" a meatless company that makes the most delicious meat substitutes. I have tried to stick to a diet guideline of, at the very least trying to implement one or two days of vegetarian eating. The health benefits from just cutting meat out once a week is incredible. So, when the girls told me about this meatless product, I was fired up and ready to try them out.
Tonight I made a simple taco salad using the Chipotle lime tenders and it was so good! Stacked full of, Spring & Iceburg blended lettuce. Sauteed onions, peppers and then topped with the Garein Chipotle lime tenders and some Queso fresco so yummy! Meat and guilt free and a cinch to prepare. Taco salad shell and build with your favorite ingredients. Love it!
