Breakfast On the Go


One of my favorite meals is breakfast. I like this because, it's also the most important meal of the day. In addition to these two things, you can afford to pile a few more calories in at breakfast because you can spend the rest of the day working it off! WIN, WIN!

The breakfast sandwich is such an amazing gift, in that, it allows you to have what would normally be a plate full of food and wrap it up, eat it with one hand and have breakfast on the go! With that in mind I wanted a little different take than just the same old breakfast sandwich, not, a biscuit, or bagel, or croissant, I decided to go ahead and combine my two favorites, the grilled cheese and breakfast. Now the only method in this was simply realizing that we eat grilled cheese with bacon all the time so just throw an egg on and grill it up, you have your entire morning meal! I love that the bacon can be swapped out for sausage, or ham, or any of your favorite breakfast meats.

Here's what I do:

- 2 slices of Bread plus butter for grilling
-Your favorite breakfast meat
-3 slices or 3 handfuls of shredded Sharp cheddar cheese
-1 egg prepared omelette style to fit the bread

Prepare your meat and set aside. Butter one side of each piece of bread. Heat a heavy bottomed skillet to medium heat and cook your eggs that have been whisked. Once eggs are finished, wipe out any remnants of the egg and place one piece of bread butter side down into hot pan. Top with first slice of cheese, then add meat, then add egg, add second slice of cheese, then add a little more meat, and finally the third slice of cheese, topping with second piece of bread, butter side on top. Let grill slowly, flipping periodically until all the cheese and other ingredients marry into a beautiful sandwich that's golden and gooey. Wrap it up in parchment or deli paper to take with you or pop it on a plate and enjoy!
