Classic Comfort Food Upon Request


My mother LOVES Chicken and Dumplings. It takes her back to her childhood and is classic comfort food throughout the Midwest and South. I'm not really sure if it's a nationwide or worldwide craving. I'm sure that everyone has their own adaptation of the recipe, as do I! I prefer the fluffy dumpling. I think that the texture is better and not to mention that it is easier to make. The flat noodle like dumplings are good as well, I just have my preference.

Last night my Mom decided she was in the mood for her classic comfort food, so I obliged by getting the dish ready and even throwing in some country cornbread to boot! It was classic comfort food upon request at Mom's house!


The recipe I usually use is "Old Fashioned Chicken and Dumplings" from ALLRECIPES.com.
I do modify the servings and make the fluffy dumplings. Any Google search for the recipe will produce a lot of similar results for the base of the broth and stock, but by all means make your dumplings to your personal taste!


With the Fall and Winter rapidly approaching this is a wonderful dish. Plus, with the leftover chicken and sauce mixture, you can easily remove any left over dumplings and make a chicken pie or add mixed frozen veggies and make a chicken pot pie!
