Amazing Asian Shrimp Salad
-Mixed greens and Iceberg lettuce mix
-Cherry tomatoes halved
-Mandarin orange segments
-Honey roasted or candied almonds or any other sweetened nut of your choice
-Chow Mein crunchy noodles
-Medium shrimp 60/80 count P&D tail on or off, it's a matter of preference
-Teriyaki glaze and Soy sauce for marinating. Enough to baste the shrimp with but not completely submerge. Only use about 1 tablespoon of the soy sauce in this step (Lower sodium soy sauce can also be substituted)
-For the Dressing
-Combine your favorite Dijon dressing with 1 tablespoon of soy sauce and 1 teaspoon of honey
Assemble your salad,
Using a grill pan or outdoor grill, cook your shrimp until cooked through and allow to cool for a few minutes
Place the cooked shrimp on top of the salad and drizzle with the dressing.
I served this salad with a vegetable spring roll on the side. It was a perfect light meal and takes just minutes to prepare.
