Well folks, so far the vegan idea looks and sounds great, but actually doing it has created a bit of a dilemma. Of course, it doesn't help that just prior to starting the week I gorged on everything unhealthy and ended up eating mayonnaise that was expired. So, instead of just calling a total quit on the concept I have decided to try a realistic approach for myself. Three days with no meat, One day totally vegan, and three days with only lean meats and veggies. A plan that is much easier to follow for someone like me.
Tonight's dinner was a fab Eggplant Parmesan with pesto pasta. I loved it and my mom actually went back for seconds. A true rarity in this house! Did the yoga this morning and am going to give it my all to not backslide on this endeavor!
