Folks, it has been one full week with no meat! I started with the thought of going full vegan and actually did for the first part, but, with other people in the home that I am cooking for,I decided to allow the animal products just not the actual animal. I honestly have to say that giving up the meat hasn't been nearly as difficult as I thought that it would be. There are so many great swaps for meat products now and are almost all really tasty.
I think that if you aren't looking for a manufactured meat like product, a terrific swap is mushrooms. They are so filling and when prepared properly are so meaty. Julia Child got it right when she told us to "not crowd the pan!" it just doesn't allow them to brown correctly. I got huge inspiration from the Cooking Channel's "Extra Virgin" Debi Mazar's hubby Gabriele prepared a Bruschetta w/mushrooms. For mine I followed the recipe and then added Parmesan shavings to the top as an added bonus! Give it a try they were delish!
