Today was my meatless Monday. I had a hard time with it this week for some reason. It was overcast weather and just the type of day that you wanna lay in bed and snack. I managed to avoid the endless eatfest and find other things to do. For dinner though, I wanted comfort food. All my childhood fav's, like, chicken nuggets, grilled cheese with tomato soup, you know, kid foods! I of course realize, that you cannot have a meatless meal with chicken nuggets, and the healthy alternative to a grilled cheese must be modified.
My menu went as follows:
Grilled provolone on whole wheat with tomato soup! You truly don't miss a thing.
Then a trip to the store landed me in front of the "Veggie Patch- Chick'N Nuggets"! I decided to give them a try and I have no regrets. They have the same look and taste as the real thing but without the meat! Bring it on! These aren't vegan friendly, as they do contain egg and some dairy product. As I type this now, I wish there were leftovers! I love rediscovering childhood favorites and being able to give them a healthy twist!
Lunch was simple pasta with olive oil and garlic topped with Pecorino-Romano.
Tomorrow is a free day! I am looking forward to it and looking for something divine to prepare!
