After going to the dentist and the doctor yesterday and being informed that my recent weight gain is affecting my health. I decided to implement the Oprah and many other people at this point "Meatless Monday". I cannot say that my meatless day will be totally vegan however it will not have any actual meat product.
So, thinking healthy...I decided on a meal that could be meat free as well as satisfying. My friend and part time life-coach Di, has been vegan for sometime now and not only feels better but is back at her true fighting weight and loving it. I remembered last night the "Canyon Ranch" pizza crust recipe that she has used on so many fab homemade pizzas. My dilemma was that I didn't have a mixer with a dough hook to be able to make up the crust for my grilled tasty treat. I opted for the Toufayan whole wheat flat bread as a sub for the actual crust. Fantastic!! It was the perfect size for two individual pizzas and crisped up nicely.
"Flat Bread Veggie Pizza Recipe"
Toufayan whole wheat flat bread rounds
Pizza sauce(Homemade marinara or your favorite jar)
Parmesan and mozzarella cheeses(if going vegan Daiya has wonderful selections of these)
Dried Oregano
Fresh Basil
Roma Tomatoes
Baby Bella Mushrooms
Red Onion
Yellow Bell Pepper
Jalepeno pepper
-Sautee vegetables(except roma tomatoes) separately until tender to nearly caramelized
-Spread about one tablespoon of your sauce on the inside of the flatbread leaving room enough around edges to create a crust
-Place a thin layer of the cheese mixture down and than build in the order of your choice with the sauteed veggies.
-Top the veggies with more cheese mixture and then place sliced roma tomatoes and fresh basil leaves around the top. Drizzle with olive oil.
*TIP* I recommend adding the basil during the last five minutes of the baking or grilling time to avoid making it to crispy and to retain its vibrant color
-Heat oven or grill with either foil or baking sheet to 400 degrees
-Place your pizza in the oven or on the grill for 10-12 minutes or until cheese has melted and begins turning a beautiful golden color
Ingredient measurements not specified. All ingredients determined by number of pizzas being prepared and according to the individuals taste.
