Mayonnaise

Apparently folks. According to our friend Julia Child it is a necessity to be able to whip up a batch of homemade mayonnaise at any given time. So with some time on my hands this afternoon I will be attempting to make my own mayonnaise for the first time ever. Guess I'll need to cut back on the cheese and butter for the holidays to make up for the additional cholesterol that I will be ingesting as I journey forth into the test kitchen!

I initially wanted to try to make cranberry mayo for after the Thanksgiving holiday to slather on a left over turkey sandwich. Wish me luck! The eggs are warming to room temperature as I write this and supposedly within five to seven minutes after the emulsion process begins I will have a batch of creamy goodness!

Fingers crossed! I will let you know how it goes!
