Is it just me? Or, do soups tend to have very specific times that we love them in our lives? From childhood comfort foods, like grilled cheese and tomato soup or piping hot cup of chicken noodle. Then, there are the very specific times of year. Nothing is better on a cold winter night than a nice cup of chili, the autumn brings to life some wonderful squash soups, then the spring brings in your cool and soothing Gazpacho and cucumber soups. Not to mention the endless varieties of stews.
I personally have never been a big soup eater. Sure, when I've been ill or for a quick go to dish on a cloudy day, I would sit down to a bowl, but until recently I haven't given these versatile dishes their props. The fact that a decent soup can be morphed into an appetizer, a fast and healthy lunch, and then again be transformed with the addition of a salad or sandwich become a full on meal.
So for those of you out there that have been like me, and neglecting the soup isle at the store or skipping over those recipes give them a try. They freeze and reheat well and are the perfect go to alternative to swinging by a fast food restaurant and spending extra calories.
