Made an insanely easy dish tonight, just to try. There's really nothing to it, and can be used as an appetizer or a side.
SEASONED ROASTED TOMATOES with MOZZARELLA
- Preheat oven or toaster oven to 425F
- Vine ripe tomatoes
- Italian seasoning
- Salt and pepper to taste
- Mozzarella cheese (fresh ball and cut into slices)
Directions
1. Cut base of tomatoes so that they sit level.
2. Cut top off and season generously with salt, pepper and Italian seasoning (this is all about your taste preference)
3. Roast in preheated oven for 10-12 minutes
4. Remove from oven and add the cheese.
5. Return to hot oven and roast an additional 5-10 minutes until cheese s bubbly and melted
6. Garnish with additional shake of Italian seasonings, parsley, or basil (OPTIONAL)
So delicious, so easy!
