Curry to the Rescue

After having a few weeks of lacking inspiration. I found a cookbook discounted and decided a little curry infusion may be just what I have needed to get me out of this slump. A family member mentioned that his mother used to make a green curry chicken and so I decided I would do the same.
Much to my dismay, I realized that my local grocer didn't carry green curry paste or curry paste at all for that matter. I went online in search of how to create curry paste from curry powder. Everyone and every site had nothing to offer. I decided to wing it and by the way...Curry powder plus luke warm water equals curry paste.

The dish was delish. With curry, ginger, garlic, green onion, soy sauce, & coconut milk served over the wonderful Jasmine rice. YUM! A side of NAAN bread rounded out the meal!
